Artichoke - grilled chicken salad

It takes only 5 minutes to make this salad, if you have leftover chicken, quinoa, brown rice. We have some sort of leftover all the time, that I can use in a salad. This time I used the leftover chicken, quinoa and rice.

If you don't have quinoa, use brown rice only. If you don't have brown rice either, replace it with oven baked sweet potato or potato.

  • 2 big handful of romain lettuce, chopped
  • 1 heaped Tbsp cooked quinoa
  • 1 heaped Tbsp cooked brown rice
  • 1 big pinch of broccoli sprout
  • 1/4-1/2 head of marinated artichoke
  • 3-4 cherry tomato
  • 1/2 cup grilled chicken, chopped
  • 1 small-medium pickle, sliced
  • 1/4 avocado, sliced

Szofia, my 10 year old daughter made a dressing from almond butter, tahini, mustard and tarragon. We ate this salad with that. But you can put simply some apple cider vinegar or fresh lemon juice on top instead of our dressing.
