If you have leftover baked sweetpotato and cooked chicken liver, you can make this salad in a couple of minutes. I used the leftover sweetpotato and chicken liver from our yesterday dinner. As I told you there, it's always good to make a bit more and use the leftover in other meals. ;)

  • 2 big handful arugula
  • 1 handful of salad mix
  • 1/2 medium zucchini chopped
  • 1-2 cooked chicken liver chopped
  • 3 cherry tomotoes
  • 1/2 bell pepper, chopped
  • 1/2 endive, sliced
  • 1 big pinch of alfalfa sprout
  • 1/2 medium avocado, sliced
  • 1/2-1 medium oven baked sweetpotato sliced
  • 1 Tbsp almond slices
  • apple cider viner to taste

 

I slice everything and put them into a bowl, sprinkle with apple cider vinegar and that's it. Serve and enjoy.
