  • 1.5 cup cashew
  • water for soaking
  • 1 cup water to prepare it
  • 4 Tbsp lemon juice
  • 4 tsp apple cider vinegar
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 3-4 Tbsp chopped chives

Instructions

  • If you have time, soak the cashew overnight. The water should completely cover it.
  • If you don't have too much time, soak it in hot water for 1 hour.
  • Remove the soaking water.
  • Put the soaked cashew into a blender.
  • Add the fresh water to the blender too.
  • Add the lemon juice, apple cider vinegar, salt and garlic powder too.
  • Blend everything.
  • When it's creamy enough, and you like the taste, add the chopped chives and stir it in with a spoon.
  • If the taste is not good enough, you can add more lemon juice and/ or apple cider vinegar, salt or garlic powder. First add only 2 Tbsp lemon juice and 2 tsp apple cider vinegar. Then start adding more, if you don't find it sour enough. I prefered it with more lemon juice and apple cider vinegar, I prefered the more intense taste.
  • If it's too thick, add a bit more water.
